There is no fixed helper ratio: plan the mix per crew and per floor, and say in the RFQ how many helpers each plumbing team needs, with the foreman coordinating slab sleeve placements with the structural formwork crew before concrete pours.
Water supply is tested under pressure, but gravity drainage fails in a different way: a run laid without enough fall, or with a dip, blocks months later. Drainage is set out to the falls on the drawings, checked with a level as it is laid, and tested, usually by filling with water or air, before it is covered.
